Ready for the Kitchen

Another week has flown by. This week is bittersweet as we say good-bye to JB 46. Kathy and Lisa have worked extremely hard in both the classroom and the kitchen. They mastered the class material gaining multiple certificates that will hopefully help them in their future job searches. And they learned the ins and outs of working in a commercial bakery (the good and the bad!)- we are sad to see them go, but know that they will do so well! Congratulations you two, we are so proud of the what you have accomplished!

JB 47 finally had their last week of classroom only. There were a couple bumps in the road, but they made it through! For Wellness Wednesday this week, Candice talked about meditation with the guys and the positive effects in can have on the brain. Miles was interested in learning more and found this on Community Medical Center’s article from November 27, 2018: A 2017 Harvard Medical School Study showed that after meditating 15 minutes daily for eight weeks, the meditators had changes in 172 genes that control inflammation, sleep-wake rhythms in the body and how sugar processes.” (link here)

And on Scientific American: “Meditation is shown to thicken the pre-frontal cortex. This brain center manages higher order brain function, like increased awareness, concentration, and decision making. Changes in the brain show, with meditation, higher-order functions become stronger, while lower-order brain activities decrease.” (link here)- make sure to check these out if you are interested in learning more about meditation!
They have made it 1/3 of the way through Nutrition and have been learning a lot about the science in food! Miles may have found his final topic, the illusive flavor of Umami!
